Ingredients

Meat

  • 1 pound sirloin or flank steak, thinly sliced

Vegetables

  • 1 small green bell pepper, sliced
  • 1 small red bell pepper, sliced
  • 1 small yellow onion, sliced
  • 4 oz baby bella mushrooms
  • 4 cloves garlic, minced

Oils & Condiments

  • 1 tbsp avocado or coconut oil
  • 1 tbsp coconut aminos
  • 1 tbsp apple cider vinegar

Cheese

  • 2 oz grated pecorino romano cheese
  • 4 oz shredded mozzarella cheese

Spices

  • 1 tsp salt
  • ¼ tsp black pepper

Instructions

  1. Season the steak: Add the thinly sliced steak to a small mixing bowl and season with salt and pepper. Stir well so the steak pieces are evenly coated with seasoning.
  2. Brown the steak: Heat a large skillet over medium-high heat. Once hot, add the avocado or coconut oil. Add the steak to the skillet and cook for 2 to 3 minutes on each side until browned. Remove the steak from the skillet and set aside.
  3. Sauté the vegetables: Add the coconut aminos and apple cider vinegar to the skillet and stir to loosen any browned bits stuck to the pan. Then add the sliced green and red bell peppers, yellow onion, minced garlic, and baby bella mushrooms. Cook the veggies until the peppers are tender but remain slightly crisp.
  4. Combine steak and veggies: Return the browned steak to the skillet and stir everything until well combined.
  5. Melt the cheese: Sprinkle the shredded mozzarella and grated pecorino romano cheese evenly over the top. Cover the skillet with a lid to allow the cheese to melt. Once melted, remove from heat and serve immediately for best flavor and texture.

Notes

  • For a spicier version, add sliced jalapeños or a pinch of crushed red pepper flakes when cooking the vegetables.
  • Thin slicing the steak ensures quick cooking and tender bites.
  • You can substitute mozzarella with provolone or cheddar cheese for a different flavor profile.
  • Serve this skillet dish over a bed of lettuce or with low-carb bread for a delightful meal.
