Ingredients

1 cup plain Greek yogurt

1/2 cup creamy peanut butter

1 tablespoon maple syrup or honey

1 teaspoon vanilla extract

2 tablespoons roasted and salted peanuts (optional)

1 cup chocolate chips or chopped chocolate (6 oz.)

2 tablespoons coconut oil

Instructions

  1. Prepare the pan: Line a baking sheet with wax paper or a silicone mat.
  2. Make the peanut butter yogurt mixture: In a bowl, combine the Greek yogurt, peanut butter, maple syrup or honey, and vanilla extract. Stir until smooth.
  3. Shape the bars: Scoop half of the yogurt mixture into 4-6 mounds on the baking sheet. Insert a popsicle stick into each mound. Top with the remaining yogurt mixture and flatten slightly with a spatula.
  4. Add the peanuts (optional): Sprinkle roasted peanuts over the top or press peanut halves into the yogurt mixture.
  5. Freeze: Place in the freezer for at least 2 hours or until frozen solid.
  6. Prepare the chocolate coating: Melt the chocolate chips and coconut oil in the microwave in 30-second intervals, stirring in between until smooth.
  7. Dip the frozen bars in chocolate: Dip each frozen yogurt bar in the melted chocolate and place them back on the baking sheet.
  8. Serve or freeze again: Enjoy immediately or return to the freezer. Let them thaw for 5-10 minutes before serving for easier biting.
