Ingredients

2 Peaches or Nectarines, sliced or diced (about 2 cups slices)

2 cups strawberries, halved or sliced

1 cup blackberries

1 cup blueberries

2 Tbsp. fresh mint, finely sliced or minced

2 Tbsp. fresh lime juice (about 1 lime)

1 tsp. honey or agave

Instructions

  1. Add the sliced peaches, halved strawberries, blackberries, and blueberries to a large mixing bowl. Sprinkle the fresh mint over the fruit.
  2. In a small bowl, whisk together the fresh lime juice and honey (or agave) until smooth and dissolved.
  3. Drizzle the dressing over the fruit salad and gently toss to combine. Be careful not to crush the peaches while mixing.
  4. Enjoy the salad right away, or store it in an airtight container in the fridge for 1-2 days. The fruit is delicate, so it’s best to eat it within 1-2 hours of making for the freshest taste.
