Instructions

  1. Prepare the Pea Topping: Place the frozen peas, pea shoots, grated parmesan cheese, 3 tablespoons olive oil, lemon juice, half a clove garlic, and salt and pepper into a food processor. Use the pulse button to chop and combine until a rough paste forms. Set aside.
  2. Preheat the Broiler or Grill: Preheat your oven’s broiler or a grill to a high temperature to prepare for toasting the bread.
  3. Toast the Ciabatta: Drizzle the 6 slices of ciabatta with 2 tablespoons of olive oil. Place them under the broiler or on the grill and toast for 2-3 minutes on each side, until they are crisp and golden brown.
  4. Rub Toast with Garlic: While the toasted bread is still warm, gently rub each slice with the remaining half clove of garlic to impart a subtle garlic flavor.
