Ingredients

8 large potatoes

1 tablespoon garlic oil (or oil + garlic powder, if not low FODMAP)

1 large bell pepper, diced

4 green onions, chopped

1 teaspoon salt

1 lb breakfast sausage (Whole30 compliant)

8 large eggs

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Wash potatoes, poke with a fork, rub with oil, and bake 50–60 minutes until tender.
  2. Meanwhile, heat garlic oil in a skillet. Sauté bell pepper, green onions, and salt for 5–7 minutes until softened. Add sausage and cook through.
  3. Cool potatoes 10–15 minutes. Slice off tops and scoop out insides, leaving a thin shell. Arrange in a 9×13 baking dish.
  4. Whisk eggs in a bowl. Stir in sausage mixture. Divide evenly among potato shells.
  5. Bake 40 minutes, until eggs are set. Let cool slightly and serve warm.

Notes

  • Use sweet potatoes instead of white for a different flavor.
  • Make mini versions with small potatoes for parties.
  • For non-Whole30, add cheese before baking.
  • Repurpose scooped-out potato for mashed potatoes or soup.
