Orange Creamsicle Gummies

  • 2 1/2 large oranges, peeled (250 grams)
  • 1/2 cup light coconut milk
  • 1 teaspoon honey
  • Pinch of sea salt

Strawberry Gummies

  • 2 heaping cups chopped strawberries (350 grams)
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 1 teaspoon honey
  • Pinch of sea salt
  • 4 tablespoons Vital Proteins Beef Gelatin

Instructions

  1. Prepare Orange Puree: Place peeled oranges in a high-powered blender like a Vitamix. Blend until smooth, about 1 minute. Line a small pot with a nut milk bag or metal strainer and pour the orange puree through it, squeezing to extract about 1 1/2 cups of juice while leaving behind pulp.
  2. Mix and Heat Orange Gelatin Base: In a pan, combine the orange juice with coconut milk, honey, and a pinch of sea salt. Whisk together and warm over low heat just until warmed, not hot. Gradually whisk in the gelatin and let sit for 1-2 minutes to eliminate foam.
  3. Mold and Chill Orange Gummies: Pour the mixture into silicone molds or a greased glass baking dish. Refrigerate for 2 hours or until firm. Remove from molds or cut into bite-size pieces if using a dish. Store in the fridge for up to 2 weeks.
  4. Prepare Strawberry Puree: Place chopped strawberries, water, and lemon juice in the blender. Blend until smooth, about 1 minute. Strain through a nut milk bag or metal strainer, squeezing to extract about 1 1/2 cups of juice while discarding pulp and seeds.
  5. Mix and Heat Strawberry Gelatin Base: Combine the strawberry juice with honey and sea salt in a pan. Warm over low heat just until warmed. Slowly whisk in gelatin and allow to rest for 1-2 minutes to remove foam.
  6. Mold and Chill Strawberry Gummies: Pour into silicone molds or a greased glass dish. Refrigerate for 2 hours until set. Remove from molds or cut into pieces. Store refrigerated for up to 2 weeks. Gummies will soften slightly at room temperature but remain firm.
