1 (10-ounce) package chopped frozen spinach, defrosted and drained
2 tablespoons unsalted butter
1 yellow onion, minced
Salt and pepper, to taste
1 cup roasted red peppers, diced
2 cups milk (any fat percentage)
1/2 cup heavy cream
