Ingredients

23 large orange-fleshed sweet potatoes

23 tablespoons extra virgin olive oil

1 teaspoon kosher salt

12 teaspoons spices of choice (e.g., smoked paprika, chipotle powder, Cajun seasoning, garam masala, pumpkin pie spice)

Instructions

  1. Preheat oven to 450°F (230°C). Place a heavy baking sheet inside to heat.
  2. Peel sweet potatoes (optional) and cut into ¼–½-inch wedges or rounds.
  3. In a large bowl, toss sweet potatoes with olive oil, salt, and spices until evenly coated.
  4. Carefully remove the hot baking sheet from oven. Spread fries in a single layer without overcrowding.
  5. Bake for 15–25 minutes, flipping after 10 minutes, until crispy and browned.
  6. Cool for 5 minutes before serving to let fries firm up.

Notes

  • For extra crispiness, soak cut fries in cold water for 30 minutes, then pat dry before baking.
  • Do not overcrowd the pan—use two sheets if needed.
  • Sweet potato skins can be left on for added texture and fiber.
