Ingredients

Fruits

  • 3 lbs oranges, peeled (about 5 cups puree)

Sweeteners

  • 1 cup sugar

Spices (Optional)

  • 1-2 cinnamon sticks
  • 1 star anise
  • 2-3 cloves

Instructions

  1. Prepare the Oranges: Peel the oranges carefully, ensuring to remove as much of the white pith as possible, as it can impart bitterness to the jam.
  2. Puree the Oranges: Using an immersion blender or a regular blender, puree the peeled oranges until smooth to create a vibrant orange base for the jam.
  3. Cook the Jam: Transfer the orange puree to a saucepan, add the sugar and optional whole spices (cinnamon sticks, star anise, and cloves). Simmer over moderate heat, stirring occasionally to prevent sticking, until the mixture thickens into jam consistency, about 20-30 minutes. To check, place a small amount on a chilled plate and observe if it gels.
  4. Jar the Jam: Pour the hot orange jam into sterilized canning jars. You can either refrigerate immediately for short-term use or process the jars in a boiling water bath for 10 minutes to preserve for longer storage.

Notes

  • Removing as much pith as possible reduces bitterness and improves jam flavor.
  • The optional spices add warm complexity but can be omitted for a pure orange flavor.
  • Test jam consistency by placing a small spoonful on a cold plate; if it thickens and wrinkles when pushed, it’s ready.
  • Process in a water bath canner to extend shelf life if storing at room temperature.
