Ingredients

1 cup heavy cream

1/3 cup cane sugar

1 tsp vanilla extract

1/4 cup fresh orange juice

Zest from 1 orange

3 orange peel halves (or 4 oz ramekins, for serving)

Mint sprigs, for garnish (optional)

Instructions

  1. In a bowl, combine the sugar and orange zest. Rub together with your fingers until the sugar is fragrant and tinted orange.
  2. Whisk in the heavy cream and vanilla extract until smooth.
  3. Pour the mixture into a saucepan over low heat and bring to a gentle simmer, stirring occasionally for about 1 minute. Do not boil.
  4. Remove from heat and immediately whisk in the orange juice.
  5. Strain the mixture through a fine mesh sieve into a bowl to remove zest and solids.
  6. Cut oranges in half and scoop out the flesh to create serving cups, or prepare ramekins.
  7. Carefully fill each orange half or ramekin with the posset mixture. Chill in the fridge for at least 4 hours or overnight until fully set.
  8. Garnish with mint or extra zest before serving, if desired.

Notes

  • Trim the bottoms of orange halves slightly to help them sit flat.
  • Use the same oranges for both zesting and juicing to minimize waste.
  • Do not let the cream boil; gentle simmering ensures the right texture.
  • Best served chilled and consumed within 3 days. Not freezer-friendly.
