Ingredients

Muffins

  • 2 large eggs (at room temperature)
  • ½ cup vegetable oil (can substitute with melted butter)
  • ½ cup plain yogurt (natural or Greek; can substitute with milk or sour cream)
  • ¼ cup orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon orange extract (optional)
  • 2 cups + 2 tablespoons all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Glaze

  • 1 cup powdered sugar
  • 1 tablespoon orange juice

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (180°C). Line a muffin pan with 12 muffin liners and set aside to prepare the batter.
  2. Mix Wet Ingredients: In a large bowl, whisk together 2 large eggs until combined. Add ½ cup vegetable oil, ½ cup plain yogurt, ¼ cup orange juice, 1 tablespoon orange zest, 1 teaspoon pure vanilla extract, and ½ teaspoon orange extract if using. Whisk until the mixture is fully blended.
  3. Add Dry Ingredients: To the wet ingredients, add 2 cups plus 2 tablespoons of all-purpose flour, ½ cup granulated sugar, 2 teaspoons baking powder, and ½ teaspoon salt. Gently whisk until just combined, taking care not to overmix the batter to keep muffins tender.
  4. Fill Muffin Cups and Bake: Divide the batter evenly among the 12 muffin cups, using a cookie scoop for consistency. Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Then, allow the muffins to cool completely in the pan.
  5. Prepare and Drizzle Glaze: In a small bowl, mix 1 cup powdered sugar and 1 tablespoon orange juice to create a smooth glaze. Adjust the consistency by adding more orange juice if needed. Drizzle the glaze over the cooled muffins and garnish with additional orange zest for a vibrant finish.

Notes

  • Ensure eggs are at room temperature for better batter consistency.
  • You can substitute vegetable oil with melted butter for a richer flavor.
  • Using Greek yogurt will make the muffins denser, while regular yogurt keeps them lighter.
  • If preferred, adjust sugar amount to make muffins sweeter; the glaze also adds sweetness.
  • The orange extract is optional but enhances citrus flavor.
  • Allow muffins to cool completely before glazing to prevent glaze from melting off.
