Ingredients

2 wild salmon fillets (67 ounces each, skinless)

23 medium red potatoes, diced into 0.5-inch pieces

Sea salt, to taste

Freshly ground black pepper, to taste

2 tablespoons clarified butter or ghee, melted

3 garlic cloves, minced or pressed

1 teaspoon chili flakes (or to taste)

2 tablespoons fresh parsley leaves, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together melted butter, garlic, chili flakes, salt, and pepper until well combined.
  3. Spread diced potatoes on the baking sheet. Drizzle with half of the garlic butter and toss well. Roast for 8 minutes.
  4. Remove from the oven and nestle salmon fillets among the potatoes. Brush salmon with the remaining garlic butter.
  5. Return to the oven and bake for 10–12 minutes, until salmon is cooked through and flakes easily with a fork.
  6. Garnish with fresh parsley before serving.
