Ingredients

3 cups old-fashioned rolled oats

1¼ cups raw pecans, whole or coarsely chopped

1 cup hulled raw pumpkin seeds

1 cup hulled raw sunflower seeds

1 cup unsweetened coconut chips

¾ cup pure maple syrup

½ cup extra-virgin olive oil

½ cup packed light brown sugar

1 tsp kosher salt, plus more to taste

Instructions

  1. Preheat oven to 300°F.
  2. In a large bowl, combine oats, pecans, pumpkin seeds, sunflower seeds, coconut, maple syrup, olive oil, brown sugar, and 1 teaspoon salt. Stir until evenly coated.
  3. Spread the mixture evenly on a rimmed baking sheet.
  4. Bake for about 45 minutes, stirring every 10–15 minutes, until golden brown and fragrant.
  5. Remove from the oven and season with additional salt to taste.
  6. Let cool completely before serving or storing.
