  • 16 ounces potato gnocchi
  • 2 cups half-and-half
  • 1 cup fresh spinach, roughly chopped
  • 2 cups shredded cooked chicken (or chopped)

Instructions

  1. Heat the fats: In a large Dutch oven over medium heat, heat 1 tablespoon olive oil and 1 tablespoon unsalted butter until melted and combined.
  2. Sauté onion: Add the diced half white onion and cook until softened and translucent, about 5 minutes.
  3. Add vegetables: Stir in the peeled and diced carrot and chopped celery. Cook until these soften, about another 5 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  4. Add broth and seasoning: Pour in 4 cups low-sodium chicken broth, add 1 teaspoon dried thyme, and season with kosher salt and ground black pepper to taste. Bring the mixture to a low boil.
  5. Cook gnocchi: Stir in 16 ounces of potato gnocchi and cook until tender, about 3 to 5 minutes.
  6. Add dairy, chicken, and spinach: Stir in 2 cups half-and-half, 2 cups shredded cooked chicken, and 1 cup roughly chopped fresh spinach. Cook until everything is warmed through and spinach is wilted, about 5 to 7 minutes.
  7. Final seasoning and serve: Taste the soup, adjust seasoning with salt and pepper if necessary, and serve hot.
