Ingredients

1/2 cup (77g) chopped strawberries (chopped into 1/2 inch cubes)

1 1/3 cups (313g) unsweetened applesauce

4 1/2 teaspoons (15g) unflavored gelatin powder

Instructions

  1. Line the sides and bottom of an 8-inch or 9-inch square pan with parchment paper for easy removal.
  2. Blend the chopped strawberries and applesauce in a blender until smooth and uniform in color.
  3. Sprinkle gelatin powder over the strawberry puree in a large heatproof mixing bowl. Whisk to incorporate. The mixture will thicken.
  4. Use a double boiler to dissolve the gelatin. Stir occasionally until the mixture becomes thinner and more liquid. Once dissolved, remove from heat and let cool to room temperature for about 10 minutes.
  5. Whip the cooled mixture in a stand mixer with the wire whisk attachment on high speed for about 15 minutes. The mixture should triple in volume and become light and fluffy.
  6. Carefully pour the mixture into the prepared pan. Use a spatula to smooth out the surface.
  7. Refrigerate the cake for at least 1 hour to set. The mixture will firm up as it chills.
