Ingredients

1.5 cups peanut butter

1.5 cups oat flour (or rolled oats processed finely in a food processor)

¼ cup maple syrup

1 cup chocolate chips

1 tsp coconut oil (optional)

Instructions

  1. In a medium-sized microwave-safe bowl, add the peanut butter and maple syrup. Microwave for 40-60 seconds, or until softened. Stir thoroughly until the peanut butter and maple syrup are fully combined.
  2. Slowly add the oat flour to the bowl and mix well. The mixture will be thick and may require some effort to mix. If it looks too dry or crumbly, add more maple syrup or peanut butter, about 1 teaspoon at a time.
  3. Prepare a muffin pan by lining it with cupcake liners or using a silicone muffin pan for easy removal.
  4. Scoop the peanut butter oat mixture evenly into the muffin pan and press it down with your fingers to compact it.
  5. In a small microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Heat in 30-second intervals, stirring between each session, until the chocolate is fully melted and smooth.
  6. Pour the melted chocolate over each peanut butter oat cup and smooth the tops with the back of a spoon. Optional: sprinkle flaky salt, sprinkles, or mini chocolate chips on top of the chocolate layer.
  7. Refrigerate the cups for 2-3 hours to allow the chocolate to set completely.
