Ingredients

1 3/4 cup desiccated coconut

1 3/4 cup powdered sugar

1/2 cup sweetened condensed milk

2 cups dark or semi-sweet chocolate chips

2 tbsp shortening

Instructions

  1. In a large bowl, mix together powdered sugar, desiccated coconut, and sweetened condensed milk until well combined.
  2. Shape the mixture into 1-inch balls and place them on a wax paper–lined pan. Refrigerate until firm.
  3. In a microwave-safe bowl, melt chocolate chips with shortening, stirring occasionally until smooth.
  4. Dip each coconut ball into the melted chocolate, letting excess drip off.
  5. Place coated balls back onto wax paper and allow them to set completely.
  6. Store in the refrigerator until ready to serve.

Notes

  • Chill coconut balls well before dipping to keep them from falling apart.
  • Use coconut oil instead of shortening for a slightly different flavor.
  • Decorate with sprinkles, shredded coconut, or contrasting chocolate drizzle before the coating sets.
