Ingredients

2 cups quick cooking oats

¼ cup dark cocoa powder

1 cup cashew butter (or nut butter of choice)

1 teaspoon mint extract

½ cup honey

½ cup mini chocolate chips (or semi-sweet chocolate chips)

Instructions

  1. In a large mixing bowl or stand mixer, combine all ingredients. Mix until fully combined. If mixing by hand, stir cashew butter and honey together first for easier blending.
  2. With slightly damp hands, scoop golf-ball-sized portions and roll into balls.
  3. Place balls in an airtight container or resealable bag.
  4. Refrigerate for up to 1 week, or freeze for up to 3 months. Thaw for 5 minutes at room temperature before eating.
