Ingredients

2 pie crusts

6 large eggs

1 cup heavy cream

1/2 cup milk

1 cup shredded cheese

1/4 cup chopped onions

1/4 cup diced ham or bacon

1/2 teaspoon salt

1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. Cut the pie crusts into small circles that will fit into the mini muffin tin. Press the crust circles into each muffin tin cup to form the base for your quiches.
  3. In a bowl, whisk together the eggs, heavy cream, milk, salt, and black pepper until smooth.
  4. Add your chosen fillings (chopped onions, diced ham or bacon, and shredded cheese) into each pastry cup.
  5. Pour the egg mixture over the fillings in each pastry cup, filling them evenly.
  6. Bake the mini quiches for 20-25 minutes, or until golden and the egg filling is set.
  7. Allow the mini quiches to cool slightly before serving. Enjoy them warm or at room temperature.
