Ingredients

10 (6-inch) corn tortillas

2 cups shredded mozzarella cheese

1 (2-ounce) can sliced black olives

2 avocados, peeled, pitted, and sliced

2 teaspoons hot pepper sauce

Instructions

  1. Heat a large frying pan or griddle over medium heat.
  2. Place one tortilla flat on the pan and cook for 1 minute.
  3. Flip the tortilla and sprinkle a little over 1/4 cup of mozzarella cheese on it.
  4. Add black olives, avocado slices, and a few dashes of hot pepper sauce.
  5. Top with another tortilla to make a sandwich.
  6. Cover with a lid and cook for 1 minute, then flip.
  7. Cook until the cheese is melted and the quesadilla is golden and crispy.
  8. Transfer to a plate and repeat with remaining ingredients.
  9. Cut each quesadilla into triangles and serve immediately.
