Ingredients

12 OREO cookies

2 tablespoons melted butter

8 ounces cream cheese (room temperature)

⅓ cup sour cream (room temperature)

1 large egg (room temperature)

⅓ cup granulated sugar

4 ounces melted semi-sweet chocolate

½ teaspoon vanilla bean paste or vanilla extract

Instructions

  1. Set cream cheese, sour cream, and egg at room temperature for 1–2 hours before baking.
  2. Preheat oven to 300°F. Place a rimmed cookie sheet with ½ to 1 inch of water on the lowest rack. Position another rack in the middle.
  3. Crush OREO cookies into fine crumbs and mix with melted butter.
  4. Line a cupcake pan with 12 liners. Add 1 tablespoon of the crumb mixture into each liner and press down firmly.
  5. In a bowl, beat cream cheese and sugar on low speed until smooth.
  6. Add sour cream and vanilla, mixing just to combine.
  7. Stir in melted chocolate.
  8. Lightly beat the egg and stir into the mixture until just combined. Do not overmix.
  9. Spoon a little over 2 tablespoons of batter into each cupcake liner. Smooth the tops and tap to remove air bubbles.
  10. Bake on the middle rack for 24–28 minutes, until tops are set but slightly jiggly.
  11. Turn off oven, crack door, and let cheesecakes rest inside for 45 minutes.
  12. Cool on the counter for 1 hour, then refrigerate for at least 2 hours.
  13. Before serving, remove liners and add your favorite toppings.

  • Add espresso powder or orange zest to enhance flavor.
