Ingredients

2 cups dinosaur (Lacinato) kale, stems removed and roughly chopped

2 cups romaine lettuce, chopped

1 cup fried tortilla strips

1/4 cup fresh cilantro, chopped

1/4 cup toasted pepitas (hulled pumpkin seeds)

1 avocado, thinly sliced

1/2 cup Greek Yogurt Caesar Dressing (with lime juice)

1/3 cup crumbled cotija cheese or queso fresco

Instructions

  1. In a large bowl, combine chopped kale and romaine lettuce. Massage the kale gently with your hands to soften the leaves.
  2. Add tortilla strips, cilantro, toasted pepitas, and avocado slices to the greens.
  3. Drizzle with Greek Yogurt Caesar Dressing and toss until everything is evenly coated.
  4. Top with crumbled cotija cheese or queso fresco. Serve immediately.
