Ingredients

Dry Ingredients

  • ¾ cup cake flour (fluffed and leveled, or weighed)
  • 2 Tbsp sugar
  • ½ tsp baking powder
  • ¼ tsp Diamond Crystal kosher salt
  • 1 Tbsp matcha powder (ceremonial or culinary grade; approximately 6 g)

Wet Ingredients

  • 1 large egg (50 g, beaten)
  • ⅓ cup whole milk
  • 2 Tbsp unsalted butter (melted)
  • 1 Tbsp honey

For the Glaze

  • ¼ cup chocolate chips (semi-sweet or white chocolate)
  • Sprinkles of your choice

Instructions

  1. Prepare Ingredients: Gather and weigh all the ingredients accurately using a kitchen scale for best results. If using volume measurements for flour, follow the fluff and sprinkle method to avoid dense batter.
  2. Preheat Oven: Preheat your oven to 425ºF (220ºC). If using a convection oven, reduce the temperature by 25ºF (15ºC). Lightly coat your donut pan with cooking spray to prevent sticking.
  3. Mix Dry Ingredients: In a large mixing bowl, whisk together the cake flour, sugar, baking powder, kosher salt, and matcha powder until well combined and uniform.
  4. Add Wet Ingredients: To the same bowl, add the beaten egg, whole milk, melted unsalted butter, and honey. Whisk gently until the batter is just combined; avoid overmixing to keep the donuts tender.
  5. Fill Donut Mold: Transfer the batter into a pastry bag fitted with a round tip or use a large Ziploc bag with a corner snipped off. Pipe the batter into the donut molds, filling each about three-quarters full to allow room for rising.
  6. Bake Donuts: Place the donut pan in the preheated oven and bake for 8 minutes. Donuts are done when a skewer inserted into the center comes out clean and they spring back lightly to the touch.
  7. Cool Donuts: Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely, ensuring they don’t become soggy.
  8. Prepare Chocolate Glaze: Melt the chocolate chips in a double boiler or microwave in 30-second intervals, stirring between each until mostly melted. Mix at room temperature until smooth and fully melted.
  9. Glaze and Decorate: Dip the cooled donuts into the melted chocolate glaze, then immediately add sprinkles of your choice on top for a festive finish.
  10. Store Leftovers: Store any remaining donuts in an airtight container in the refrigerator for up to 2 days to maintain freshness and prevent spoilage.

Notes

  • Use ceremonial-grade matcha for vibrant color and flavor, or culinary-grade for a more budget-friendly option.
  • Do not overmix the batter to keep the donuts light and tender.
  • Ensure the donuts cool completely before glazing to prevent the glaze from melting off.
  • The donuts can be made ahead and stored in the refrigerator, but are best enjoyed fresh.
  • You can customize the glaze with white chocolate or other flavored chips as preferred.
  • If you don’t have a donut pan, use a muffin tin and adjust baking time as needed.
