Ingredients

2 cups mashed potatoes (prepared)

1 cup shredded sharp cheddar cheese

2 large eggs

1/2 cup all-purpose flour

1 tsp salt

1/2 tsp black pepper

Instructions

  1. If using fresh potatoes, boil them until fork-tender, then mash with butter and cream until smooth. For leftover mashed potatoes, simply reheat them until warm.
  2. In a large bowl, combine the warm mashed potatoes, shredded cheddar cheese, eggs, flour, salt, and black pepper. Mix until all ingredients are well incorporated.
  3. Scoop out golf ball-sized portions of the mixture and roll them into small balls, yielding about 12 servings.
  4. Preheat the oven to 375°F (190°C) if baking, or heat oil in a deep fryer or large pan for frying.
  5. For baking: Place the puffs on a baking sheet and bake for 20-25 minutes, or until golden brown and crispy.
  6. For frying: Carefully place the puffs in the hot oil and fry until golden brown and crispy on the outside, about 4-5 minutes. Remove from oil and drain on paper towels.
