Ingredients

Gelatin Mixture

  • ½ cup water

Alcohol

Instructions

  1. Prepare molds: Lightly spray cups or molds with cooking spray to prevent sticking. If using lime shells as molds, this step can be skipped.
  2. Make sugar syrup: In a small saucepan over medium heat, combine the sugar and water. Stir until the sugar dissolves fully, but do not allow the mixture to boil. Remove from heat once dissolved.
  3. Bloom gelatin: Pour the lime juice into a medium bowl. Sprinkle the unflavored gelatin evenly over the surface and let it sit for 5 minutes until the gelatin softens and the surface becomes slightly wrinkled.
  4. Dissolve gelatin: Stir the lime juice and gelatin mixture into the warm sugar water. Heat gently over medium heat for 2 to 3 minutes, stirring constantly until the gelatin is fully dissolved—avoid boiling. Remove from heat.
  5. Add alcohol: Stir in the blanco tequila and triple sec into the warm gelatin mixture until evenly combined.
  6. Pour and chill: Evenly distribute the liquid mixture into the prepared molds or cups. Refrigerate for 3 to 4 hours, or until fully set and firm.
  7. Serve: If using lime shells, cut them into wedges before serving. Optionally garnish rims with salt or sugar and add lime gummy candies or lime slices for decoration.
