Ingredients

Tapioca Pearls

  • 1 cup tapioca pearls (see notes)
  • 6 cups water (divided into 5 cups and 1 cup)
  • 3 tablespoons natural cane sugar

Mango Tea Mixture

  • 1 ripe mango
  • 1/2 cup evaporated milk
  • 1 black tea bag (see notes)
  • 2 tablespoons sweetened condensed milk

  • Crushed ice (as needed)

Instructions

  1. Steep the Tea: Steep the black tea bag in hot water for the time specified on the tea packaging. Once brewed, remove the tea bag and let the tea cool to room temperature.
  2. Cook Tapioca Pearls: Bring 5 cups of water to a boil in a medium pot over medium heat. Add the tapioca pearls and stir occasionally to prevent them from sticking together.
  3. Simmer and Rest Pearls: Cook the pearls following the package’s recommended time, which may be up to 30 minutes. Once cooked, remove the pot from heat and let the pearls sit in the hot water for an additional 30 minutes to achieve a chewy, soft texture.
  4. Drain and Rinse: Drain the pearls using a sieve and rinse them thoroughly with cold water to stop cooking and remove excess starch.
  5. Sweeten Pearls: Transfer the rinsed tapioca pearls into a mixing bowl and stir in the natural cane sugar to coat evenly.
  6. Prepare Mango Tea Blend: In a blender, combine the cooled black tea, evaporated milk, sweetened condensed milk, and fresh mango slices. Blend until smooth and creamy.
  7. Assemble the Drink: In serving glasses, add a desired amount of sweetened tapioca pearls followed by a layer of crushed ice. Pour the mango tea blend over the ice and serve with a large straw. Enjoy your homemade mango bubble tea!
