Ingredients

Base Mixture

  • 3/4 cup warm mashed potato (about 1 large potato)
  • 1 tablespoon soft butter
  • 1 teaspoon pure vanilla extract

Instructions

  1. Prepare the Pan: Line a 9 x 9 inch baking pan with parchment paper, allowing at least an inch to hang over the edges. Lightly butter the parchment paper and the inside of the pan to prevent sticking. Set aside.
  2. Make the Candy Mixture: In a large mixing bowl, add the warm mashed potato, soft butter, vanilla extract, and a pinch of salt. Using a mixer on medium speed, beat the ingredients until well combined. Gradually add the sifted powdered sugar, one cup at a time, mixing thoroughly after each addition. Stir in the shredded coconut, mixing until everything is evenly incorporated.
  3. Chill the Mixture: Transfer the candy mixture into the prepared baking pan, spreading it evenly. Cover tightly with plastic wrap and refrigerate overnight to allow the mixture to firm up.
  4. Cut the Candy Bars: Remove the pan from the refrigerator the next day. Use the parchment paper overhang to gently lift the candy block out of the pan. Cut the cold candy into rectangular pieces measuring approximately 2 x 1 inches. Arrange the pieces on a parchment-lined baking sheet or pan, spacing about an inch apart. Cover and freeze to set further.
  5. Melt the Chocolate: Melt the dark dipping chocolate in the microwave using intervals: 30 seconds, then stir; 15 seconds, stir again; and an additional 15 seconds if necessary. Continue stirring until the chocolate is smooth and fully melted.
  6. Coat the Candy: Dip the frozen candy bars into the melted chocolate, allowing any excess chocolate to drip off. Place the coated bars on waxed paper-lined baking sheets to allow the chocolate to set and harden.
  7. Store the Candy: Once the chocolate coating is firm, store the candy in an airtight container. Keep the candy fresh for up to one week, as it may start drying out after that time.
