Ingredients

Brown Sugar Syrup

  • 2 tbsp brown sugar, packed
  • 2 tbsp water

Tapioca Pearls

  • 2 cups water
  • ¼ cup tapioca pearls

Lychee Bubble Tea

  • ½ cup water
  • 1 green tea bag
  • ⅓ cup lychee nectar
  • ⅓ cup milk

Instructions

  1. Prepare Brown Sugar Syrup: In a small saucepan, combine 2 tablespoons of water and brown sugar. Heat over medium heat, stirring occasionally until the sugar completely dissolves, about 5 minutes. Remove from heat and let the syrup cool for a few minutes.
  2. Cook Tapioca Pearls: Bring 2 cups of water to a boil in a small pot. Add ¼ cup of tapioca pearls and cook according to package instructions — typically between 5 to 10 minutes for quick-cooking pearls. For other types, cooking may take 20 minutes or more.
  3. Drain and Coat Pearls: Once tapioca pearls are cooked, strain them from the water immediately. While still warm, coat the pearls in the prepared brown sugar syrup to infuse sweetness and let them soak while you prepare the tea.
  4. Steep Green Tea: Boil ½ cup of water, then add the green tea bag. Steep for 5 minutes to extract a rich flavor. Remove the tea bag and let the brewed tea cool slightly; chilling in the refrigerator for a couple of hours is ideal for better taste.
  5. Assemble Lychee Bubble Tea: Mix the cooled green tea with ⅓ cup lychee nectar and ⅓ cup milk. Add the tapioca pearls coated in brown sugar syrup to this mixture and stir gently.
  6. Serve: Pour the lychee bubble tea over ice and enjoy immediately for a refreshing and sweet beverage.
