Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. Rice Cauliflower: Core the cauliflower and cut it into florets. Place the florets into a food processor and pulse until the cauliflower resembles rice in texture. If the cauliflower seems too moist, wrap it in a paper towel and squeeze to remove excess liquid.
  3. Mix Ingredients: In a large bowl, combine the riced cauliflower with ½ cup shredded mozzarella, Parmesan cheese, egg, minced garlic, chopped basil, chopped parsley, salt, and pepper. Mix thoroughly until the mixture binds together.
  4. Shape Breadsticks: Spread the mixture onto the prepared baking sheet, shaping it into a rectangle approximately 9 inches by 7 inches and about ¼ inch thick.
  5. Bake Initial Layer: Place the baking sheet in the oven and bake for 10–12 minutes until the base is firm.
  6. Add Cheese Topping: Remove from the oven and evenly sprinkle ¾ cup shredded mozzarella cheese over the top. Return to the oven and bake further until the cheese is melted and beginning to brown.
