Ingredients

For the Fries

  • 26 ounces frozen French fries (or homemade fries)

For the Cajun Ranch Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper (or black pepper)
  • 2 teaspoons ranch seasoning powder (or more, to taste)
  • 1/2 teaspoon cayenne powder, divided
  • 8 ounces white cheddar cheese, shredded (about 2 cups)

Instructions

  1. Preheat and cook fries. Preheat your oven or air fryer to 400°F. Arrange the frozen French fries in a single layer on a large rimmed baking sheet or in the air fryer basket. Bake or air fry according to the package instructions or until golden and crispy.
  2. Make a roux. In a 2-quart saucepan over medium heat, melt the butter until bubbly. Whisk in the flour to combine well and cook for about 2 minutes, stirring constantly, until mixture is thick and pasty.
  3. Prepare the cheese sauce base. Gradually whisk in the milk, about 1/2 cup at a time, stirring continuously to form a smooth sauce. Add salt, white pepper, ranch seasoning, and half (1/4 teaspoon) of the cayenne powder, stirring to blend.
  4. Thicken the sauce. Reduce heat to medium-low and cook the sauce, stirring frequently, for about 5 minutes until thick enough to coat the back of a spoon.
  5. Add cheese and finish sauce. Remove the sauce from heat and gently fold in the shredded white cheddar cheese using a silicone spoon. Return to low heat and cook for an additional 2-3 minutes, stirring occasionally, until the sauce is thick, creamy, and smooth. Set aside.
  6. Assemble and serve. Once the fries are golden brown and cooked through, transfer them to a serving platter. Pour the warm Cajun ranch cheese sauce evenly over the fries. Sprinkle the remaining 1/4 teaspoon cayenne powder evenly on top. Serve immediately while warm.

Notes

  • Use fresh, homemade fries if you prefer; adjust cooking time accordingly.
  • Adjust cayenne powder to your preferred spice level for milder or spicier sauce.
  • Ranch seasoning powder can be store-bought or homemade for more control over flavor.
  • For extra crispiness, spread fries in a single layer and avoid crowding the pan or air fryer basket.
  • Serve immediately for best texture of fries and creamy sauce.
