Ingredients

Fudge Base

  • 3½ cups granulated sugar
  • ¼ teaspoon baking soda
  • 3 ounces lime Jell-o powder
  • 1½ cups milk
  • ½ cup butter

Instructions

  1. Combine Ingredients: Place sugar, baking soda, lime Jell-o powder, and milk into a large saucepan (preferably larger than 4 quarts to prevent overflow).
  2. Cook Mixture: Cook over medium heat, stirring frequently to prevent sticking and scorching, until the mixture reaches 234℉. Be cautious as the hot mixture will become foamy during cooking.
  3. Add Butter and Beat: Remove the saucepan from heat once the temperature is reached. Pour the hot mixture into a bowl and add the butter. Beat until the mixture thickens slightly.
  4. Set the Fudge: Pour the mixture into a greased and lined 8-inch square pan. Chill the fudge in the refrigerator until firm, at least 2 hours.
  5. Serve and Store: Cut the firm fudge into squares. Store in an airtight container at room temperature for up to 2 weeks or freeze for longer storage.

Notes

  • Use a candy thermometer to precisely reach the correct temperature of 234℉ for perfect texture.
  • Stir continuously to avoid burning the sugar mixture.
  • Ensure the pan is well greased and lined with parchment paper to easily remove fudge.
  • Fudge can be stored at room temperature or frozen to extend shelf life.
