Ingredients

Dry Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking soda

Wet Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • 2 tablespoons lime juice
  • 1 teaspoon lemon zest
  • 1 teaspoon lime zest

For Rolling

  • ⅓ cup white sugar

Instructions

  1. Preheat the oven and prepare baking sheet: Set your oven to 350°F (180°C). Line a cookie sheet with parchment paper or a Silpat silicone mat to ensure cookies bake evenly and don’t stick.
  2. Mix dry ingredients: In a large bowl, combine the all-purpose flour and baking soda, mixing well. Set this mixture aside for later incorporation.
  3. Cream butter and sugar: In a separate large mixing bowl, use an electric hand mixer or stand mixer to cream together the softened unsalted butter and granulated sugar until the mixture is smooth and fluffy.
  4. Add wet flavorings: To the creamed butter and sugar, add the egg, vanilla extract, lemon juice, and lime juice. Mix until fully combined and the batter is smooth.
  5. Combine dry and wet ingredients: Gradually add the dry ingredients into the wet ingredients. Then incorporate the lemon and lime zest. Stir until just combined, careful not to overmix to maintain cookie tenderness.
  6. Shape and roll cookies: Using a 1-inch cookie scoop, portion out dough balls. Roll each dough ball in the ⅓ cup of white sugar so they are evenly coated, which will create a sparkly, slightly crispy exterior when baked.
  7. Bake the cookies: Place the sugared dough balls onto the prepared cookie sheet spaced evenly. Bake in the preheated oven for 10 minutes, or until the cookies are set and lightly browned at the bottoms.
  8. Cool the cookies: Allow the cookies to cool on the cookie sheet for 5 minutes. Then, transfer them to a wire rack to cool completely before serving or storing.

Notes

  • To enhance citrus flavor, make sure to use fresh lemon and lime juice as well as zest.
  • Rolling the dough balls in sugar before baking creates a delightful texture contrast – the cookies will be soft inside but slightly crisp and sparkly outside.
  • Make sure the egg is at room temperature to ensure smooth, even mixing.
  • Do not overmix the dough after adding the flour mixture to avoid tough cookies.
  • Cookies can be stored in an airtight container at room temperature for up to 5 days.
  • For gluten-free option, substitute the all-purpose flour with a gluten-free flour blend in a 1:1 ratio.
