Ingredients

Truffle Mixture

  • 1 cup white chocolate chips (180 g)
  • 1/4 cup butter (60 g)
  • 1 big pinch salt
  • 2 tbsp lemon zest (from 2 lemons)
  • 3 tbsp heavy whipping cream
  • 1 tsp vanilla paste or extract (optional)
  • 2-3 drops yellow food coloring (optional)
  • a couple drops lemon extract

For Rolling

  • 1/4 cup powdered sugar

Instructions

  1. Prepare White Chocolate Base: Place the white chocolate chips in a medium mixing bowl and set aside.
  2. Make Lemon-Infused Cream: In a small saucepan, melt the butter and salt together with the lemon zest over medium heat. Stir in the heavy whipping cream and continue heating the mixture until it is almost boiling. Be careful not to let it boil over.
  3. Combine Ingredients: Pour the hot cream mixture through a fine-mesh sieve directly over the white chocolate chips to ensure zest and solids are removed. Add the vanilla paste or extract and optional yellow food coloring if desired. Stir gently until the mixture is completely smooth and glossy.
  4. Chill the Mixture: Cover the bowl with plastic wrap or a lid and refrigerate the truffle mixture until it firms up enough to handle, about 30 minutes to 1 hour.
  5. Form the Truffles: Using a heaping teaspoon, scoop portions of the mixture and quickly roll them into balls with your hands. Roll each ball in powdered sugar to coat evenly.
  6. Final Chill: Place the finished truffles on a lined tray or plate and refrigerate for at least 30 minutes to set before serving.

Notes

  • Use high-quality white chocolate chips for the best flavor and texture.
  • Adjust lemon zest quantity based on your preference for citrus intensity.
  • The optional vanilla and yellow food coloring enhance flavor and appearance but can be omitted.
  • Store truffles refrigerated in an airtight container for up to one week.
  • Allow truffles to sit at room temperature for a few minutes before eating for a melt-in-your-mouth texture.
