Ingredients

4 cod fillets, skinless (about 6 oz each)

1/4 cup all-purpose flour

1 tsp paprika

1/2 tsp onion powder

1/2 tsp dried thyme

1/2 tsp dried oregano

1/4 tsp cayenne pepper

Salt, to taste

Black pepper, to taste

3 tbsp butter, divided

1 tbsp olive oil

2 garlic cloves, minced

1/2 cup low-sodium chicken broth

2 tbsp fresh lemon juice

2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. In a small bowl, combine flour, paprika, onion powder, thyme, oregano, cayenne, salt, and black pepper.
  2. Coat both sides of the cod fillets evenly with the flour mixture.
  3. Heat 1 tablespoon butter and 1 tablespoon olive oil in a large non-stick skillet over medium-high heat.
  4. Add cod fillets and sear for 3–4 minutes per side, until golden brown and flaky. Transfer to serving plates.
  5. Reduce heat to medium-low. In the same skillet, melt the remaining butter. Add garlic and sauté about 15 seconds until fragrant but not browned.
  6. Stir in chicken broth and lemon juice, removing the skillet from heat to avoid excessive steaming.
  7. Pour sauce over the cod fillets and sprinkle with fresh parsley. Serve warm.

Notes

  • Swap cod with halibut, haddock, or tilapia.
  • Use vegetable broth or white wine instead of chicken broth for a flavor twist.
  • Add capers for brininess.
  • Include dill or thyme in the butter sauce for a herby variation.
  • For a lighter option, skip the flour coating and season the fish directly.
  • Best reheated gently in a skillet with a splash of broth to prevent drying.
