Ingredients

5 medium eggs

1 green onion, chopped

2 tbsp carrot, chopped or grated

1/4 tsp salt

1/8 tsp black or white pepper

1 tsp neutral oil (vegetable or canola oil)

Instructions

  1. In a bowl, whisk the eggs with salt and pepper until well combined.
  2. Add the chopped carrots and green onions to the egg mixture and whisk again.
  3. Heat a 10-inch non-stick pan over low heat and add 1 teaspoon of oil.
  4. Pour 1/3 of the egg mixture into the pan and cook until the top is almost set. Roll the omelette gently from one side.
  5. Pull the rolled omelette to the other side of the pan, add the second 1/3 of the egg mixture, and repeat the process.
  6. After adding the final 1/3 of the egg mixture, roll it up, and let it rest for a couple of minutes before cutting.
  7. Slice the rolled omelette into 6-8 pieces. Serve immediately or store for later.
