Ingredients

Dry Ingredients

  • 2 1/2 cups Kodiak buttermilk pancake mix
  • 1/2 cup mini chocolate chips (plus extra for topping)

Wet Ingredients

  • 1 cup + 1 tablespoon milk (almond milk recommended)
  • 1/2 cup maple syrup or honey
  • 1/4 cup avocado oil

Other

  • Cooking spray (such as Misto) for greasing muffin tin
  • Parchment paper liners for muffin tin

Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 375°F (190°C). Line a muffin tin with parchment paper liners and spray with cooking spray to prevent sticking. Set aside.
  2. Combine Wet and Dry Ingredients: In a large bowl, whisk together the Kodiak pancake mix, almond milk, maple syrup, and avocado oil until well combined. Allow the batter to sit for 5 minutes to thicken slightly.
  3. Add Chocolate Chips: Fold in the mini chocolate chips gently to distribute them evenly throughout the batter.
  4. Fill Muffin Tin and Bake: Divide the batter evenly among the muffin cups. Optionally sprinkle extra chocolate chips on top for garnish. Bake the muffins for 16 to 18 minutes or until they are puffy and a toothpick inserted in the center comes out clean.
  5. Cool and Serve: Remove the muffins from the oven and allow them to cool for about 5 minutes before serving. Enjoy warm or at room temperature.

Notes

  • Using almond milk makes this recipe dairy-free; however, any milk of choice can be used.
  • Maple syrup can be substituted with honey for a different sweetness profile.
  • Adding extra chocolate chips on top before baking creates a visually appealing finish.
  • Ensure not to overbake to keep the muffins moist and tender.
  • These muffins freeze well—store in an airtight container and reheat as needed.
