Ingredients

Fruit and Herbs

  • 1 kiwi
  • 1 lime
  • 10-15 fresh mint leaves (a small handful), plus more for garnish

Sweetener

  • 1 tsp agave or maple syrup, or more to taste (optional)

Liquids

  • 2 oz white rum
  • Sparkling water (sugar-free lime flavor recommended)

Instructions

  1. Prepare Garnish: Reserve a slice or two of each kiwi and lime to use for garnish later. Peel the remaining kiwi and roughly chop it into pieces. Cut the lime into thick rounds and then quarter some pieces.
  2. Muddle Ingredients: In a tall glass, add the chopped kiwi, lime quarters, fresh mint leaves, and agave or maple syrup if using. Using a muddler or the back of a wooden spoon, gently muddle the mixture to release the flavors of the fruit and mint without pulverizing it completely.
  3. Add Rum and Mix: Pour in the white rum over the muddled mixture and stir with a long spoon until well combined.
  4. Add Ice and Garnish: Fill the glass with ice cubes or crushed ice. Add the reserved kiwi and lime slices on top as garnish. Note that the kiwi slice reserved for garnish is best left unpeeled for visual appeal.
  5. Top with Sparkling Water and Serve: Pour sparkling water into the glass to top off the cocktail. Serve immediately with a straw if desired for an extra refreshing experience.

Notes

  • Leave the kiwi slice for garnish unpeeled for a nicer presentation, but peel the kiwi used for muddling to avoid bitterness.
  • Peeling the lime is not necessary for muddling or garnish.
  • For a clearer cocktail, muddle and mix ingredients in a shaker without sparkling water, then strain over ice and top with sparkling water, but muddling in the glass allows the kiwi flavor to remain intense despite some pulp.
