Ingredients

Dry Ingredients

  • 1 ⅔ cups (210g) all purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients

  • ½ cup (113g) salted butter (softened but still cool to the touch)
  • ½ cup (110g) packed brown sugar (fresh and soft)
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Mix-ins

  • 1⅔ cups (approx 215g) assorted mix-ins (e.g., chocolate chips, chopped nuts, candies)

Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper to prevent sticking and ensure even baking.
  2. Combine Dry Ingredients: In a small bowl, whisk together the all-purpose flour, baking soda, and salt. Set this mixture aside for later use.
  3. Cream Butter and Sugars: In a large bowl, use a hand mixer or stand mixer to beat the softened butter with brown sugar and granulated sugar for 1-2 minutes until the mixture is smooth and creamy. Scrape down the sides as needed.
  4. Add Egg and Vanilla: Beat in the large egg and pure vanilla extract until fully incorporated.
  5. Mix in Dry Ingredients and Mix-ins: Gradually add the flour mixture to the wet ingredients, mixing just until combined. Stir in a little over one cup of the mix-ins, reserving the rest for topping the cookies.
  6. Shape the Cookies: Scoop generous 2-tablespoon portions of dough and place them a couple of inches apart on the prepared baking sheets. For thicker cookies, pile the dough higher rather than wider. Press some of the reserved mix-ins onto the tops of each dough ball to make the cookies look more appealing.
  7. Bake: Bake the cookies for 9-12 minutes until the edges are golden brown but the centers remain slightly underdone. Rotate the baking sheets halfway through baking if needed. Adjust baking time if dough balls are smaller or larger. Avoid overbaking to maintain soft centers.
  8. Cool: Transfer the baking sheets to wire racks and allow the cookies to cool completely before enjoying.

Notes

  • Make sure to spoon and level the flour to avoid dense cookies.
  • The brown sugar should be fresh and soft for proper creaming and moisture.
  • Mix-ins can be customized to your preference such as adding dried fruits, different types of chocolate chips, or nuts.
  • For thicker cookies, mound dough balls higher rather than wider before baking.
  • Baking time may vary depending on cookie size; smaller cookies need less time, larger ones more.
  • Do not overbake to keep the centers soft and chewy.
