Ingredients

Basic Egg Mixture

Chicken Sausage Spinach Cheddar

  • ¼ cup white onion, finely diced
  • 2 cooked chicken sausage links, chopped into tiny pieces
  • ¼ – ⅓ cup shredded cheddar cheese
  • ⅔ cup baby spinach, roughly chopped (optional)

Mushroom Spinach Mozzarella

  • ½ – ⅔ cups white or baby bella mushrooms, diced
  • ⅔ cup baby spinach, roughly chopped
  • ¼ – ⅓ cup shredded mozzarella or cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder

Buffalo Chicken Spinach

  • ½ cup bell pepper, deseeded and chopped into small pieces
  • 1 cup baby spinach, roughly chopped
  • ¼ – ⅓ cup shredded mozzarella or cheddar cheese
  • ¼ cup buffalo sauce (reduce milk by ¼ cup when using this)
  • ¼ cup chopped green onions
  • 1 cup cooked or rotisserie chicken, chopped into small pieces

Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 350°F (175°C) and grease a 12-well muffin tin using avocado oil or cooking spray. Alternatively, reusable muffin liners can be used for easier cleanup and to prevent sticking.
  2. Mix Eggs and Seasoning: In a large mixing bowl, whisk together the 8 eggs, ¼ cup milk, salt, and black pepper until well combined and slightly frothy. This creates the base for your egg bites.
  3. Add Flavor Variations: Choose one of the five flavor variations and stir in the specific ingredients for that version into the egg mixture, ensuring even distribution throughout.
  4. Portion Into Muffin Cups: Divide the egg mixture evenly among the greased muffin cups, filling each nearly to the top to allow room for puffing during baking.
  5. Add Toppings: Optionally sprinkle extra shredded cheese over the top of each muffin cup to add a cheesy crust on baking.
  6. Bake: Place the muffin tin in the preheated oven and bake for 14 to 18 minutes until the egg bites are puffed, set, and lightly golden. They will deflate slightly upon removal from the oven.
