Ingredients

8 tbsp melted margarine

1 (8 oz) can cream-style corn

1 (8 oz) can kernel corn, drained

1 cup sour cream

2 eggs

1 package Jiffy Corn Muffin Mix

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 1½- or 2-quart casserole dish.
  2. In the greased casserole dish or a mixing bowl, combine melted margarine, cream-style corn, and kernel corn. Stir in sour cream.
  3. Lightly beat the eggs, then add to the dish along with the corn muffin mix. Mix until well combined.
  4. Spread mixture evenly in the dish and bake for about 35 minutes, until golden and set in the center.
  5. Serve hot, optionally with a pat of butter.
