Ingredients

Wet Ingredients

  • 1 1/2 cups unsalted butter (softened)
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • 1/4 teaspoon cream of tartar

  • 4 (3 oz.) packages of Jello gelatin powder (variety of flavors or two flavors of two packages each)

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) to ensure it is ready when the dough is prepared for baking.
  2. Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and sugar together with a mixer until fluffy and well combined. Add the egg and vanilla extract, mixing until fully incorporated.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and cream of tartar to evenly distribute the leavening agents.
  4. Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, mixing continuously on low speed until the dough forms and is well combined.
  5. Divide and Flavor Dough: Split the dough into four equal sections. Sprinkle two tablespoons of a chosen Jello flavor onto each portion, then knead in the gelatin powder thoroughly. Optionally add a few drops of food coloring to intensify the color.
  6. Shape the Cookies: Roll each section of dough into 1-inch balls. Then roll the balls in the leftover Jello powder or sugar for extra flavor and texture.
  7. Arrange on Baking Sheet: Place the dough balls on a baking sheet, spacing them approximately two inches apart to allow spreading.
  8. Flatten the Dough: Gently press each dough ball down with the bottom of a glass to form flattened cookie shapes.
