The Chicken Avocado Melt is a quick and comforting sandwich filled with shredded chicken, creamy avocado, and gooey melted cheese, all toasted between crispy golden bread. It’s a perfect option for a hearty lunch or a weeknight dinner.
2 cups cooked shredded chicken (grilled or roasted)
1 ripe avocado, sliced
4 slices sturdy bread (whole grain or sourdough)
½ cup shredded cheese (cheddar, Monterey Jack, or mozzarella)
2 tablespoons mayonnaise (optional)
1 teaspoon lemon juice
Salt and pepper, to taste
Butter or margarine, for toasting
Fresh cilantro or parsley, for garnish (optional)
In a bowl, combine shredded chicken, mayonnaise, lemon juice, salt, and pepper. Gently fold in sliced avocado and herbs if using.
Spread butter on one side of each bread slice. Place one slice, buttered side down, in a skillet or on a baking sheet.
Top with shredded cheese, then the chicken-avocado mixture, and cover with another slice of bread, buttered side up.
Cook in a skillet over medium heat or use a panini press for 3–4 minutes per side, until golden and cheese is melted. Or bake at 375°F (190°C) for about 10 minutes.
Let rest for 1 minute, then slice diagonally. Garnish with fresh herbs if desired and serve hot.
