Ingredients

2 tablespoons extra virgin olive oil

4 boneless, skinless chicken breasts

1 teaspoon kosher salt

1/2 teaspoon ground black pepper

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/4 teaspoon crushed red pepper flakes (optional)

1/2 cup low-sodium chicken stock

1/2 cup oil-packed sun-dried tomatoes, drained and chopped

3/4 cup heavy cream

1/2 cup grated parmesan cheese

1 cup baby spinach leaves (optional)

Instructions

  1. Set the Instant Pot to sauté mode and add olive oil. Season chicken breasts with salt and pepper.
  2. Sear the chicken in batches for about 2 minutes per side until golden. Remove and set aside.
  3. Add garlic, Italian seasoning, and crushed red pepper flakes to the pot. Sauté briefly, then press cancel.
  4. Pour in chicken stock and deglaze the pot by scraping up any browned bits from the bottom.
  5. Return chicken to the pot. Add sun-dried tomatoes and heavy cream. Season with a pinch of salt.
  6. Seal the lid and cook on high pressure for 5 minutes. Let the pressure naturally release for 10 minutes, then open the lid.
  7. Remove chicken and place on a clean platter. Set the Instant Pot to sauté mode again.
  8. Stir in parmesan cheese and baby spinach (if using). Cook for 2–3 minutes, until the sauce thickens and spinach wilts.
  9. Serve chicken with sauce spooned over the top. Garnish with extra parmesan or fresh basil if desired.
