Ingredients

2 tbsp whole grain mustard

1 tbsp honey

2 tbsp lemon juice, divided

3 garlic cloves, minced

Kosher salt and freshly ground black pepper, to taste

2 lbs bone-in, skin-on chicken thighs (4 pieces)

12 oz green beans, trimmed

Extra-virgin olive oil, as needed

Instructions

  1. Preheat grill or grill pan over medium heat.
  2. In a bowl, whisk mustard, 1 tbsp lemon juice, honey, and garlic. Season with salt and pepper.
  3. Pat chicken thighs dry and season with salt. Brush both sides with honey-mustard mixture.
  4. Place chicken skin-side down on grill. Cook until skin is browned, then flip. Continue cooking, basting occasionally, until chicken reaches 165°F internally. Rest on a plate.
  5. Toss green beans with olive oil, salt, pepper, and remaining 1 tbsp lemon juice. Divide into 4 portions and wrap each in foil packets.
  6. Place packets on grill and cook 5–8 minutes, until beans are crisp-tender.
  7. Serve chicken thighs with green beans on the side.
