Ingredients

Salmon

  • 2 pounds salmon fillet (skin on)

Honey Mustard Glaze

  • 2 tablespoons whole grain mustard
  • 2 tablespoons Dijon mustard
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Garnish (optional)

  • Fresh minced parsley
  • Lemon wedges

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with foil for easy cleanup.
  2. Prepare the Salmon: Place the salmon fillet skin-side down on the lined baking sheet. Lightly season with salt and pepper to enhance the flavor.
  3. Make the Glaze: In a small bowl, whisk together the whole grain mustard, Dijon mustard, honey, minced garlic, lemon juice, smoked paprika, salt, and black pepper until smooth.
  4. Apply the Glaze: Spread the honey mustard mixture evenly over the top of the salmon, making sure to coat it thoroughly for maximum flavor. Fold up the sides of the foil around the salmon to contain the juices during baking.
  5. Bake the Salmon: Bake in the preheated oven for 18-20 minutes, or until the salmon is light pink throughout and flakes easily with a fork. The internal temperature should reach 135-140°F; it will continue to cook to 145°F while resting.
  6. Rest and Serve: Allow the salmon to rest for 2-3 minutes after baking. Garnish with fresh minced parsley and lemon wedges if desired, then serve warm.

Notes

  • For even cooking, make sure the salmon fillet is of uniform thickness.
  • Do not overcook salmon to keep it moist and tender; it should flake easily with a fork but remain juicy.
  • Fresh lemon juice adds brightness; you can adjust the amount to taste.
  • If you prefer spicier, add a pinch of cayenne pepper to the glaze.
  • The foil helps keep the glaze moist and prevents drying during baking.
