Ingredients

8 oz wheel of brie cheese

2 Tbsp fig jam

1 Tbsp chopped fresh rosemary

1/4 cup shelled pistachios (half crushed, half whole)

2 dried figs, sliced

1/3 cup honey, divided

Instructions

  1. Preheat oven to 350°F and lightly grease a brie baker, pie pan, 8×8 inch baking dish, or small cast iron skillet.
  2. Place the brie in the baking dish and score the top in a criss-cross pattern with a knife.
  3. Spread fig jam over the top of the brie, warming it slightly if needed for easier spreading.
  4. Sprinkle chopped rosemary, arrange sliced dried figs, and scatter pistachios over the top.
  5. Drizzle with half of the honey.
  6. Bake for 15–20 minutes, until the center is gooey. Test by gently pressing with a spoon or knife.
  7. Remove from oven and drizzle with the remaining honey.
  8. Serve warm with crackers, sliced baguette, or apple slices.

Notes

  • Do not remove the rind; it helps hold the cheese together while baking.
  • Serve immediately for best texture and flavor.
  • Fresh thyme can be used instead of rosemary.
