Ingredients

Vegetables

  • 2 pounds carrots, diagonally cut into 2 to 3-inch pieces

Sauce

  • 5 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons honey
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon fresh ground black pepper

Garnish

  • Chopped fresh parsley

Instructions

  1. Preheat Oven: Preheat your oven to 425˚F (220˚C) to prepare for roasting the carrots.
  2. Prepare Baking Sheet: Grease a rimmed baking sheet with cooking spray to prevent the carrots from sticking during roasting.
  3. Cut Carrots: Peel and diagonally slice the carrots into pieces about 2 to 3 inches long and set them aside.
  4. Cook Garlic Butter Sauce: In a large nonstick skillet over medium heat, melt the butter. Add minced garlic and cook, stirring frequently, for about 3 minutes until the garlic is lightly browned but not burnt.
  5. Add Honey: Remove the skillet from heat and stir in the honey until the sauce is well combined.
  6. Toss Carrots with Sauce: Add the carrot pieces to the skillet or a mixing bowl, pour the garlic butter honey sauce over them, season with salt and pepper, and toss until all carrots are evenly coated.
  7. Arrange and Roast: Spread the coated carrots in a single layer on the prepared baking sheet. Roast for 22 to 25 minutes, or until the carrots are tender and caramelized.
  8. Serve: Remove from the oven, transfer to a serving plate, taste and adjust seasoning if needed, then garnish with fresh chopped parsley before serving.

Notes

  • Be careful not to burn the garlic when cooking; stir frequently and watch closely.
  • For a stronger honey flavor, you can drizzle a little more honey over the finished carrots before serving.
  • This dish can be made ahead and reheated gently in the oven.
  • Use fresh parsley for best garnish flavor and appearance.
  • Carrots can be peeled or scrubbed clean depending on preference; peeling gives a smoother texture.
