Ingredients

Fruit Base

  • 2.5 cups of strawberries, tops removed
  • 2 Tbsp fresh lime juice
  • 1/3 cup pure maple syrup (or honey or agave)

Gelatin Mixture

  • 3 Tbsp unflavored gelatin

Instructions

  1. Blend the Fruit Mixture: Place the strawberries, fresh lime juice, and maple syrup in a blender. Blend until the strawberries are fully broken down to create a smooth puree. Strain the mixture through a fine mesh strainer to remove seeds, resulting in a smoother texture.
  2. Heat and Dissolve Gelatin: Pour the strained strawberry juice into a saucepan over medium heat. Gradually sprinkle in the unflavored gelatin while whisking continuously to prevent clumps from forming. Bring the mixture to a gentle boil while whisking constantly, then remove from heat as soon as it starts boiling.
  3. Pour into Molds: Transfer the gelatin mixture to a Pyrex glass measuring cup for a clean, easy pour. If using square silicone molds, pour directly in; for gummy bear or intricate molds, use an eye dropper to fill precisely to avoid spills. Fill each mold to the top slowly and carefully.
  4. Chill and Set: Place the filled molds on a baking sheet and refrigerate for 1 to 2 hours until the gummies are firm and completely chilled.
  5. Unmold and Store: Once set, pop the gummies out of the molds and enjoy. Store leftovers in an airtight container in the fridge for 3 to 4 days to maintain freshness.

Notes

  • Strain for Smoothness: Use a fine mesh strainer to remove strawberry seeds for a silky smooth gummy texture.
  • Pick the Right Molds: Square molds are easy to fill; use an eye dropper for detailed shapes like gummy bears to avoid spills.
  • Use a Baking Sheet: Place molds on a baking sheet for easy and spill-free transferring in and out of the fridge.
  • Prevent Clumps: Sprinkle gelatin slowly while continuously whisking to ensure even dissolution and prevent lumps.
