Instructions

  1. Prepare Ingredients: Dice the mangoes into small pieces. Peel the ginger and prepare the garlic or Brazilian sofrito if using. Measure out cilantro, lime juice, olive oil, honey, and red pepper flakes.
  2. Add to Blender: Place the diced mangoes, cilantro leaves, lime juice, olive oil, ginger piece, red pepper flakes, honey, and sofrito or garlic into the blender or food processor. Season with salt and pepper to taste.
  3. Blend Until Smooth: Blend the mixture on high speed until it reaches a smooth, creamy consistency. Stop and scrape down the sides if necessary to ensure even blending.
  4. Adjust Seasoning: Taste the dressing and add more salt, pepper, or honey if desired to balance the flavors.
  5. Serve or Store: Pour the dressing over your favorite salad or vegetable bowl immediately, or transfer to an airtight container and refrigerate. The dressing keeps well chilled and can be used within several days.
