Ingredients

Tea Base

  • 1 3/4 cups / 420 ml hot water
  • 3 bags of Tazo Passion tea

Gelling Agent

  • 6 tbsp unflavored gelatin powder

Sweetener (Optional)

  • 23 tbsp honey

Instructions

  1. Steep the Tea: In a saucepan with a pourable lip, add the hot water and the passion fruit tea bags. Allow them to steep for 10 minutes to create a strong hibiscus infusion.
  2. Bloom the Gelatin: Measure about 1/2 cup of the steeped tea into a separate bowl and sprinkle the unflavored gelatin powder evenly over the surface. Let it sit aside to absorb the liquid and bloom.
  3. Warm the Remaining Tea: Gently heat the rest of the tea in the saucepan, leaving the tea bags in. Warm the liquid without bringing it to a boil or simmer — just enough to dissolve the gelatin effectively.
  4. Remove Tea Bags: Carefully take out the tea bags from the warmed tea, discarding them.
  5. Combine Gelatin and Tea: Add the gelatin and tea mixture from the bowl back into the saucepan with the brewed tea. Stir continuously until the gelatin is completely dissolved, ensuring a smooth mixture without lumps.
  6. Add Sweetener: Remove the pan from heat and whisk in the honey, if using, until fully dissolved and combined. Skim off any white foam that forms on top and discard it for a clearer gummy texture.
  7. Pour into Molds: Transfer the gelatin mixture into a heatproof jug for easier pouring. Then pour it evenly into silicone molds or a refrigerator-safe pan.
  8. Chill to Set: Place the molds or pan into the refrigerator and chill until fully set, which takes about 1 hour. Once firm, remove the gummies from the molds or cut them into desired shapes if set in a pan.

  • Do not allow the tea to boil once the gelatin is added, as high heat can impair the gelatin’s gelling ability.
  • To make vegan gummies, substitute gelatin with agar-agar powder, but note the texture and setting time will differ.
